Running a brewpub/concept restaurant isn’t easy- it’s a lot of work, a lot of sweat and the occasional tears.

There are a lot of good, earnest people working behind the scenes, who put in a great deal of effort, round-the-clock, to ensure that everything you love about stays that way.

And these people are none other than our never-tiring, ever-inspiring staff.

Meet the man responsible for serving your favourite comfort food in ways you wouldn’t have imagined possible—say hello to Tenzing – our cool and calm senior bartender at The Permit Room.

When did you join TPR?

 I joined TPR in Feb 2016

What were you doing before that?

Before TPR, I did my hotel management in Mangalore University. I took a long break after my studies. During that time, I was helping my parents and brother in business. I did a bartender course, worked at City Bar in UB City and then joined The Permit Room.

What business were you helping your family with?

Clothes and garments business

What is your role at TPR?

I am a senior bartender and I take care of the bar. Sometimes I also work as a cashier. I love working in the bar!

Did you always want to be a bartender?

Yes! When I was in college, I wanted to be a professional bartender. I did a professional course in bartending for 3 months and then I started working in a bar.

Where did your love for bartending start?

When I was in college, I was always participating in college fests etc, taking care of the bar. I was participating in competitions, making different cocktails, mixing up ingredients and just having fun!

What is a typical work day like?

I work the second shift. Duty starts at 2:30. I have lunch first, enter the bar, check everything that is done by the break shift people. I check the hand over notes and cross check what is there and not, check shortage etc. We organise garnishes, cut fruits and basically prepare the station such that we can make as many cocktails as we need! 

What do you do on your day off?

I love to sleep. I don’t wake up until noon. Once I wake up, I clean my room, wash my uniforms. I have 4 roommates; we all go outside and watch movies. I love watching English movies of all kinds.  We go to eat and usually it’s KFC, I love KFC and all other kinds of junk foods. In the night, we go out, go to the mall, buy groceries, come back to the room and cook. And of course, a few beers to accompany our meal.

Avengers, End Game.

Who is your favourite superhero?


What are your hobbies?

I can’t really say I have a hobby as such. But yes, I love swimming. I go to Shanti Nagar swimming pool whenever I can.

Where are you from?

I am a Tibetan and I am a Buddhist. My family lives here and I see them once a month as it is a 3-4-hour journey. I have never been to Tibet but I would love to go there. I have two brothers and two sisters

Do you follow Buddhism?

Yes, completely.

What about it do you follow?

Dalai Lama is our God, we follow what he preaches. We believe in karma, if you do good, good comes to you and if you do something bad, it catches up with you. We believe in karma.

Our motto – we do not hurt people, if you can’t help, don’t hurt. 

How has your experience in TPR been so far?

TPR is a very nice experience, it is completely different from City Bar. The management, company, staff, team, policies are all different. It is nice here and I love working here because of the management and team.

Do you follow any bartender?

Not really but there used to be a channel on youtube where the bartender would flair the cocktails. – I love watching him do that!
