Running a brewpub isnt easy- its a lot of work, a lot of sweat and the occasional tears.
There are a lot of good, earnest people working behind the scenes, who put in a great deal of effort, round-the-clock, to ensure that everything you love about Toit stays that way.
And these people are none other than our never-tiring, ever-inspiring staff.
Our very own Toit Army- a battalion dedicated to the cause of good beer!
If you’re handling money at a busy brewpub, you’ve got to be quick and you’ve got to be slick. Leaving no room for slip-ups, meet our very own Quick Draw McGraw, our cashier, Pradeep Roy.
So what do you do at Toit?
Im working as the cashier.
How long have you been working here?
Im the opening staff. From the time Toit started, I have been working here.
Im the opening staff. From the time Toit started, I have been working here.
What were you doing before you joined Toit?
I was working at another pub in Bangalore, as a cashier there as well.
I worked there for three years. Even there, I was part of the opening staff.
Are you from Bangalore?
Yes! Born and brought up in Bangalore itself, but I am a Tamilian.
Before the previous pub, what line were you working in?
Actually, my career started in a pizza place, in the year 1995. Ive always been part of the hospitality industry.
In the pizza place, I used to make pizza. I am actually a pizza maker. In those kind of places, they put you in all the jobsyou have to be in the kitchen, be part of service, also in the delivery line. Even taking orders.
After this pizza place, the next place I joined didnt have any role in the kitchen open, so I joined as a cashier. I have been sticking to that only. It has been almost 15-20 years now.

Does your family also stay here?
Yes! I am married and I have two childrenmy daughter Sahana, who is in the 3rd standard, and the second one my son Rovin, who is studying in 1st standard.
At Toit, do you work with a team or are you the only one handling your area?
No no! There is full team support. We are about four cashiers, and we work as a team. We involve the service team as well. Everyone here is very cooperative.
Can you describe a typical work day?
Normally, in the morning I get up at 6 in the morning because my children have to go to school at that time.
After they go, my wife goes for work. She usually leaves by 9.
So, after having my breakfast, I will relax, watch a movie or some news on the tv.
I leave my house by 1:30 because I have to be here by 2:30. After that, I start my work. As soon as I get in, I meet all my colleagues and then come to my counter. I take a handover from the cashier, whichever floor Im on and then I continue my work.
I leave at around 11:45- 12:00 pm, at closing.
Is it a hectic job?
No. no! Not at all hectic. For me, it is very easy.
Tuesday is my off-day. I spend time with my kids.
And when is your off day? What do you do on your day off?
Tuesday is my off-day. I spend time with my kids. After finishing school, by around 3 pm they come home. So the whole day I am with them only.
I never go out, because I am at home only once in a week, so I stay at home and play with them. I enjoy with them only.
What is the best and worst thing about your job?
Most enjoyable thing is that no matter how much crowd comes in, we manage it. I like that. Even the weekdays are busy for us, and we try to and want to give more service to our guests. The challenge again is to handle whatever crowd comes in and I enjoy that challenge.
What is so different about working here, compared to the other places youve worked at?
As a cashier, it is almost the same. Except, that the crowd here is a lot more. As an experience, it is really good. The owners are good people, and I have never seen a management like this at any other place. I really like that.
The best part is that everyone is treated equal hereright from the assistant to the management. There is no hierarchy.
The challenge is to handle whatever crowd comes in. I enjoy that challenge.
Do you have any favourites at Toit, in their food and drink?
My favourite beer is the Toit Hefeweizen. And in the food, the pastas and pizzas are very good.
Apart from the work you do, and spending time with your kids, are there other things you enjoy doing a lot?
I like playing the carrom board. That is my most favourite, right from my childhood. I started playing with my family members and cousins.
Apart from that, Im a big fan of Rajnikanth.
Which is your favourite movie of his?
All the movies! Each and every movie. I cannot pick one movie like that.
And I have to watch his movie on the releasing day, morning show. At any cost, I have to see it.
First day, first show in the theatre. Im a big fan.
