Behind the Brewpub ScenesAssistant Brewers Jeffin and Vishwa spill some brewery secrets!

Running a brewpub isn’t easy- it’s a lot of work, a lot of sweat and the occasional tears.

There are a lot of good, earnest people working behind the scenes, who put in a great deal of effort, round-the-clock, to ensure that everything you love about Toit stays that way.
And these people are none other than our never-tiring, ever-inspiring staff.
Our very own Toit Army- a battalion dedicated to the cause of good beer!

Say hello to Assistant Brewers Jeffin, the man with a quirky sense of humour and a decent amount of mischief up his sleeve, and to soft-spoken and terribly shy Vishwa, the two men responsible for handling all things brewery related.

How long have you been a part of Toit?
From the very start- we joined in 2010, in December. 

We’ve been a part of Toit from the very start.

Why Toit?
Vishwa: One of my friends from the previous place I worked at mentioned that someone was starting off a project like Toit and I just happened to apply.
Jeffin: I used to do private parties before this, basically bar management. It was a struggle, finding enough parties to do, and I was looking for a good job close to Indiranagar, which is also where I stay. Around that time I heard about Toit and just dropped by. Neither of us had any prior experience with brewing.
Initially we started with bar tending and bar management, and then when Matt joined we began assisting him in the brewery. 

Did both of you know each other before joining Toit?
Well, we knew each other from before, but we didn’t plan on joining Toit together or anything. It just happened by chance that we applied for similar jobs.

What does a typical day in your life look like?
Jeffin: Personally, my day starts at 6 am, with me trying to put off the alarm about three times before I finally wake up. Off and on, off and on! I usually reach work by 7 am. We do all the checking and reading of temperatures first, and then start the brew.

So you supervise the brewing after that?
Jeffin: No, we don’t. Mr. Matt does all the supervising and we do the brewing!

When does your day end?
Vishwa: We do the cleaning after, because the hygiene standards always need to be very high. We finish by about 5 pm. It depends on the brew, actually. The entire process of brewing a beer is usually about 7-8 days. Lagers take longer, while the Ales are a very fast process.

So what do you do when you’ve run out of a particular brew?
Vishwa: There’s a particular gentleman, a regular customer, who gets very upset when the Tintin Toit is not on tap. We let the waiters handle these kind of situations! If we do get involved, we suggest they try some other beers, like the Specials.

Craziest thing you’ve seen in the many years you’ve been here?
Jeffin: Personally, I can say that we’ve had many beer baths! This happened initially, when we weren’t too experienced. One incident like that was when I tripped over the pipe connecting the tank to the taps. All the beer came rushing out! That’s happened quite a few times. But that’s the craziest it gets. We’re very careful!
Vishwa: *After a long pause* I was there when these things happened. So ya, those are the craziest thing I’ve seen too.

Does being brewers mean you have a very high capacity for beer?
I usually have about 2-3 pints.
Jeffin: Vishwa is the taster and I’m the drinker! Well, I can count till about the eighth glass. After that…!

Your favourite out of all the Toit brews you’ve co-created.
Jeffin: I like the Red Ale. That, and my favourite from the Specials is the Pumpkin Ale.
Vishwa: I like the IPA very much. I like that it is very bitter.

The only reason Matt’s not too scary is because he has a very soft voice.

So is Matt (Head Brewer) a scary boss?
Jeffin: Well, he hasn’t scared us too much yet! We’re lucky. The only reason he’s not too scary is because he has a very soft voice.
Vishwa: Matt is a senior person and thats the only reason he needs to be a little strict. We respect that he makes sure everything is done just right.

Tell us a little known secret about Matt!
Jeffin: Some days, both of us come to work and complain about the same hang over!
Vishwa: That’s because Matt drinks only beer. He doesn’t eat any food. He has a saying- “One glass of beer is equal to two slices of bread.”
So you can imagine!

Tell us a secret about the Management! Who is the most enthusiastic sampler?
Jeffin & Vishwa: We are!!!

Do customers ask you about the new beers and try to get free samples from you?
Vishwa: Yes. Sometimes we have customers coming to us and asking about the beers.
Jeffin: They also ask us for free beer. There’s one thing they need to understand- even I don’t get free beer. So…! 

More important than everything else, is the great atmosphere we get to work in everyday.

What’s the best thing about being a part of a place like Toit?
Vishwa: Till now we’ve been very happy. We have good bosses. If we’ve been here for the last four years, it is because of them.
Jeffin: The working process is also really good. One of the really nice things about Toit is the working environment. More important than the other benefits, is the great atmosphere we get to work in everyday.
